Ingredients:
3 boneless skinless chicken breasts, cut into 1-inch pieces2 t. vegetable oil½ t. salt1 t. pepper1 red bell pepper, cut into 1-inch pieces1 c. pineapple chunks (fresh or canned)1 T. garlic, minced½ t. ground ginger½ cup pineapple juice⅓ c. soy sauce⅓ c. chicken broth¼ c. hoisin sauce¼ c. brown sugar2 t. cornstarchWarm Cooked Rice
Directions:
- Heat the oil in a large skillet over medium heat.
- Add the chicken and season with the salt and pepper.
- Cook the chicken for 4-6 minutes stirring occasionally until the chicken is cooked through.
- Add in the red bell pepper and pineapple and cook for 3-5 minutes until the pepper is tender.
- In a small bowl, combine the pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger and cornstarch.
- Whisk until all the ingredients are thoroughly combined.
- Pour this mixture into the skillet and bring to a low simmer and cook for 1-2 minutes until the sauce has thickened.
- Remove from heat once the sauce has thickened.
- Serve over warm, cooked rice.
